Ranch Dressing Chicken - Bill's Way

Bill & I have been together for nearly 20 years.  From the start the girls & I loved his Saturday morning breakfasts, the times he'd grill for us, etc.  Plus he was just funny to be around.




As time went by he started doing all of the cooking.  It took a very short moment for me to get over my own ego trip and enjoy the feast in front of me.  I've never looked back and have been a fan of Weight Watchers ever since out of necessity.




*  One disclaimer - we're watching our cholesterol and eat mainly fat free products, small portions of meat, etc.  If Bill can make food taste good working with fat free products, I know you can with your favorite products.

Now to last night's entree - Bill took one Chicken Breast (with Rib bone), removed the skin, scored it with 3 cuts to allow the sauce to get to the chicken better.




He mixed Ranch Salad Dressing with equal parts of Sour Cream plus some Italian Seasoning.  Pour the mixture over the chicken breast.  (See above)

Add fresh vegetables of your choosing.  He used purple onion, green pepper, green onion, and some tomatillo.  Have Tomatoes in reserve - add these during the last 10 minutes.



Bake at 350 degrees for about 60 minutes (we like our chicken thoroughly cooked).  Add the tomatoes for an additional 10 minutes.  (Since you'll use more chicken that he did, you may need to cook longer, etc.)


The gravy this made was wonderful over mashed potatoes.  He used my favorite 10" x 10" Corning-ware dish so it doesn't show the volume it made because the dish is so big for that solitary chicken breast.  Wish I had samples for you but...it's all gone.

To Frugal in WV - it doesn't touch your wonderful recipes & explanations - but it's fun & the flavors are great!

To Ginger - it's another of Dad's "concoctions" that you love. It really does taste good & for the most part it fits my "whap-whap-bake" pattern of cooking. I have no doubt why he does the cooking.
