Bill's "Carrot Mashed Potatoes"

We're almost to Thanksgiving.  Bill's busy making his first batch of "Carrot-y Mashed Potatoes" that I always ask for.  I'm getting a double batch this year because I wanted to tell you about it in case you wanted to add it to your menu.

Always trying to get the girls to eat vegetables, he decided to help them "like" their carrots better by adding them to his top seller - Mashed Potatoes.  It was a hit with even our choosiest eater and it's been on our list of favorites ever since.

You make them just as you would Mashed Potatoes with one addition - Carrots.  

Bill said the one thing to make sure of... cut your carrots smaller than your potatoes so they'll be ready for mashing at the same time.  (See photo below)

Now - the finished product and they were delicious!  He made enough for us to have some tomorrow also!  For 3 large potatoes & 1/2 pound of carrots - he also added - 1T of margarine, 1/2 c sour cream (instead of milk), some Italian Seasoning and salt/pepper to taste.  (We're a family of 2 now so you may need to double/triple the amounts.)
